20-Minute Dinner: Asian Crab Salad

I have to admit that when I first made this dish I was jumping for joy: It has the perfect mix of sweet, salty, and sour along with lots of different textures.

Note: I bought frozen crab meat and thawed it before use—it's a bit sweeter and better tasting than the precooked stuff.
Prep Time:5 minutes
Total Time:20 minutes
¼ c coconut flakes
2 Tbsp sesame seeds
3 Tbsp coconut oil
4 spring onions, sliced thin
½ stick lemongrass, finely sliced
1½" piece ginger, peeled and sliced into matchsticks
½ c bean sprouts
1 red grapefruit, peeled and segmented
1 long red chile, seeded and finely sliced
½ lb raw crab meat
½ c cilantro, for garnish
2 Tbsp coconut sugar
2 Tbsp tamari
2 Tbsp lime juice
2 tsp taramind paste
1.Toast coconut and sesame seeds in frying pan over medium heat until golden. Set aside.
2.Heat oil in large skillet. Add onions and cook, stirring occasionally, until golden brown, about 6 minutes. Transfer to plate with slotted spoon and set aside. Remove pan from heat.
3.Combine all dressing ingredients in small bowl and stir well to combine.
4.Return pan to medium heat. Add lemongrass and ginger and cook 3 minutes. Transfer to large bowl and add sprouts, grapefruit, and chile.
5.Add crabmeat to skillet and sauté until cooked through, 3 to 5 minutes.
6.Transfer crab to bowl with salad. Top with dressing and toss well. Garnish with coconut flakes, sesame seeds, onions, and cilantro.
