Classic mayonnaise, summer tarragon sauce and sweet chili sauce: recipes for summer salad dressings

If in summer you need to lean on something, then not on ice cream, but on salads with seasonal vegetables. And to make the dish really tasty, do not forget about sauces. Chef Jeremy Uryuti from Le Restaurant shared three types of dressings that are easy to repeat.

Classic mayonnaise

  • 2 yolks
  • 1 tbsp. l. vinegar
  • 2 tbsp. l. Dijon mustard
  • 500 ml of olive oil
  • salt / pepper to taste
  1. Separate the yolks from the proteins.
  2. Add salt / pepper and vinegar with mustard to yolks.
  3. Stir and let stand 10–15 minutes. IT IS IMPORTANT THAT THE YELLOW MASS WAS A ROOM TEMPERATURE.
  4. Gradually, without ceasing to interfere all the time, pour in a thin stream of olive oil. The amount of oil and the density of mayonnaise depend on the amount of oil.
